Spicy Salmon Roll

INGREDIENTS

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4-6 sheets of nori (dried seaweed)
  • 1/2 lb fresh salmon, sliced into thin strips
  • 1/2 avocado, sliced
  • 1/2 cucumber, sliced into thin strips
  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha sauce
  • 1 tsp sesame oil
  • Soy sauce and wasabi, for serving

RECIPE

  1. Rinse the sushi rice in cold water until the water runs clear. In a medium pot, combine the rice and water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the water has been absorbed.
  2. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat, stirring until the sugar has dissolved. Remove from heat and let cool.
  3. Once the rice is cooked, transfer it to a large mixing bowl. Add the vinegar mixture to the rice and mix well to combine.
  4. In a small bowl, mix together the mayonnaise, Sriracha sauce, and sesame oil.
  5. To make salmon spicy sushi rolls, lay a sheet of nori on a sushi mat or a sheet of plastic wrap. Spread a thin layer of rice on top of the nori, leaving a 1-inch border at the top.
  6. Spread the spicy mayonnaise mixture over the rice.
  7. Place strips of salmon, avocado, and cucumber in the center of the rice.
  8. Using the mat or plastic wrap to help you, tightly roll up the sushi, pressing down as you roll to keep it compact.
  9. Slice the sushi rolls into pieces using a sharp knife. Serve with soy sauce and wasabi on the side.
