INGREDIENTS
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 4-6 sheets of nori (dried seaweed)
- 1/2 lb fresh salmon, sliced into thin strips
- 1/2 avocado, sliced
- 1/2 cucumber, sliced into thin strips
- 1/4 cup mayonnaise
- 2 tbsp Sriracha sauce
- 1 tsp sesame oil
- Soy sauce and wasabi, for serving
RECIPE
- Rinse the sushi rice in cold water until the water runs clear. In a medium pot, combine the rice and water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the water has been absorbed.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat, stirring until the sugar has dissolved. Remove from heat and let cool.
- Once the rice is cooked, transfer it to a large mixing bowl. Add the vinegar mixture to the rice and mix well to combine.
- In a small bowl, mix together the mayonnaise, Sriracha sauce, and sesame oil.
- To make salmon spicy sushi rolls, lay a sheet of nori on a sushi mat or a sheet of plastic wrap. Spread a thin layer of rice on top of the nori, leaving a 1-inch border at the top.
- Spread the spicy mayonnaise mixture over the rice.
- Place strips of salmon, avocado, and cucumber in the center of the rice.
- Using the mat or plastic wrap to help you, tightly roll up the sushi, pressing down as you roll to keep it compact.
- Slice the sushi rolls into pieces using a sharp knife. Serve with soy sauce and wasabi on the side.
