Naengmyeon

North Korean cuisine is not well-known or widely documented, and access to authentic North Korean recipes is limited. However, here is a recipe for a dish that is said to be popular in North Korea:

INGREDIENTS

  • 1 package of naengmyeon noodles (buckwheat noodles)
  • 2 cups of beef broth
  • 2 tbsp of soy sauce
  • 2 tbsp of rice vinegar
  • 2 tbsp of sugar
  • 1 tbsp of sesame oil
  • 1 tbsp of gochujang (Korean red pepper paste)
  • 1 cucumber, julienned
  • 2 hard-boiled eggs, sliced
  • 1 pear, julienned
  • Ice cubes

RECIPE

  1. Cook the naengmyeon noodles according to the package instructions. Drain and rinse under cold running water until the noodles are cool.
  2. In a bowl, whisk together the beef broth, soy sauce, rice vinegar, sugar, sesame oil, and gochujang to make the sauce.
  3. Divide the cooked noodles between two bowls. Pour the sauce over the noodles.
  4. Top each bowl with the julienned cucumber, sliced hard-boiled eggs, and julienned pear.
  5. Add a few ice cubes to each bowl to keep the noodles cold.
  6. Serve immediately.
